Lonzino (about 750 gr) Salumificio del Buongustaio

Lonzino is one of the lightest cured meat, obtained from the pork loin deboned, cured and matured for 3-4 months. Its fragrance is inebriating, sweet and spicy while its taste, on the contrary, is savoury but not salty. Its peculiarity is the typical compactness of light meat of which it is made of. Its shape is thin and cylindrical and it is wrapped with a natural packaging tied with cord. Its slice is crimson coloured with sparse white stripes of fat.

Advice to eat: it is excellent if eaten thinly sliced as carpaccio with arugula and fresh parmisan cheese shavings .
