- Traditional balsamic vinegar “Bollino Aragosta” is the one with the most amount of vinegar among the three traditional balsamic vinegar and it is aged for at least 12 years. Its delicate fragrance and its pleasant intense acidity make it perfect on carpaccio, oil dip and marinade. It is good if used warm to flavour meat or fish after being cooked and for sauce.
- Traditional balsamic vinegar “Bollino Argento” is aged for a period between 12 and 25 years, for this reason it is more concentrated and its acidity is less perceptible. It has a complex and pleasant sour-and-sweet taste which makes it perfect for raw food but for first and second courses as well.
- Traditional balsamic vinegar “Bollino Oro” is aged for more than 25 years so it is a culinary treasure to disclose and taste drop after drop exclusively for raw use. Because its taste is particularly long-lasting it is perfect as an after-meal elixir, but itsextraodinary organoleptic abundance make it good when combined with cheese and sweets.
