Traditional homemade production started in the XII century.
Like at the time of Matilde di Canossa and Boccaccio, this Parmesan is produced only with fresh cow's milk of "frisona" breed exclusevely. It comes from morning and evening milking, it is partly skimmed from the top layer. The only things added are whey fermented the day before and calf rennet. Therefore it is a genuine product which cheese factory has been producing with great experience and passion since 1902, in other words since three generations. The resulting cheese is cut by hand or thread and vacuum-sealed packaged.
Suggestion to taste: because of its short ageing, Parmigiano reggiano D.O.P. 20 months is perfect with raw vegetables and fresh fruit such as apples, pears, grapes and strawberries.
Its combination with pears and balsamic vinegar compote is well known, it an excellent mixed flavour given by the contrast between salty cheese and sweet compote which creates a unique sweet and savour taste. Therefore it is good for meals, eaten alone or seasoned with fruit mostarda drinking dry white wine with ( "Rubiglia" dry malvasia,"Spergola Brut Classic Method" and "Spergle frizant" )
