Boiled must is subjected to alcoholic fermentation in a cistern and then to acetificazione (the process through which alcohol becomes vinegar) in 220 litre oak and chestnut barrels. Both fermentations occurs in natural environment. At the end the product is poured in barrels in series. During 25 years ageing each barrel is yearly filled up with vinegar from the bigger barrel next to it.
Environment: every single action of the process occurs in natural environment and it is subjected to seasonal temperature variations.
The product does not contain OGM and it is GLUTEN FREE. It does not contain SULPHITE because the rigid observance of traditional production method avoids its formation.It is in 100 ml package which is kept in a case and a blue velvet bag with blown glass measuring cap to pour vinegar and a leaflet.
