Salsa contadina, often also called salsa rossa or salsa rossa alla contadina, is a mixture of cooked vegetables (peppers, onion, carrot, and celery) in vinegar and preserved in oil. The mixture is quite coarse, and the vegetables are still crunchy, giving this sauce a particularly rustic appearance and flavor.

Salsa contadina pairs beautifully with boiled or grilled meats, but is also excellent served on crostini or as a sandwich filling, especially with tuna and mayonnaise.
